The Arroqueño is a respectful plant from the field. Its stalks are huge and fleshy, which requires a very specific cooking to penetrate its dense heart.

El Arroqueño de Quiéreme Mucho is a tribute to patience. Produced in San Pedro Taviche, Oaxaca, this Agave Americana var. Oaxacensis is a monumental plant that can take up to 18 years to mature, absorbing the climatic and mineral history of the sierra.

Our artisanal process is designed to honor the density of this colossus:

  • Longevity Selection: We only harvest agaves that have completed their biological cycle (capons). By waiting almost two decades, we guarantee an exceptional sugar concentration that translates into an oily and rich texture.

  • Deep Cooking: Arroqueño pineapples are massive and dense. Its cooking in a conical stone oven requires a special thermal mastery to penetrate to the center of the heart without burning the outside, caramelizing the fructans to release those characteristic notes of chocolate and cinnamon.

  • Milling and Fermentation: Crushed in Tahona and fermented with native yeasts. Here, the density of the must requires constant monitoring to ensure that the complex sugars are transformed into high quality alcohol.

  • Copper distillation: Through a slow double distillation, we refine the potency of this giant. The copper polishes the structure, delivering a distillate that, despite its alcoholic richness, is pleasant, sweet and velvety in the mouth.

Why is he said to be the Father of the Swordsman?

Genetically, the Arroqueño is the wild ancestor of the Espadín(Agave Angustifolia). They share DNA, but the Arroqueño is the “wild, giant and long-lived” version. If you like Espadín, Arroqueño will make you fall in love because it is a deeper, more complex and sweeter version of that profile.

Absolutely. In 18 years, the agave absorbs the history of the climate: droughts, rains, minerals. That concentration of time translates into a flavor density (dry extract) that no young agave can replicate. You don’t drink alcohol, you drink time.

Look for the “chocolate” or “coffee” note in the aftertaste and an oily texture in the glass. Fake or young Arroqueños are thin and only taste grassy. Ours leaves slow “legs” (tears) in the glass, a sign of its richness in ripe sugars.
